Polygons in 3D modeling allows the modeler to choose a form of a shape with polygons. Polygons are flat shapes with at least 3 sides to the shape. Modeling using polygons can be used to make models such as humans, flora and animals. Apart from using polygon modeling to make these three, you can also use the technique to make hard surfaces, which can be used for industrial objects. 3Ds Max, Blender, Wings 3D and many other applications supports the use of 3D modeling.
When a 3D modeler uses polygons to make objects, the modeler is able to have a high level of control over the object he/she is creating. This makes it so that light weight models can be created that are suitable for game engines, which have limitations on the amount of polygons that can be used in a scene.
